A two-minute dressing that transforms salads, grain bowls, and roasted vegetables — our honey adds floral depth that sugar simply cannot.
Ingredients
- 3 tbsp The Nikkitas Raw Pine Honey
- 3 tbsp light tahini
- 3 tbsp Nikkitas Extra Virgin Olive Oil
- 2 tbsp fresh lemon juice
- 1 small garlic clove, finely grated
- 4–5 tbsp water (to thin)
- Salt, to taste
Method
- Whisk the honey, tahini, olive oil, lemon juice and garlic together in a bowl or jar. The mixture will seize and look thick — that is normal.
- Add water one tablespoon at a time, whisking until you reach a pourable, creamy consistency.
- Taste and adjust: more lemon for brightness, more honey for sweetness, more water to thin. Season with salt.
- Use immediately, or store in a sealed jar in the fridge for up to a week. Bring to room temperature before using and whisk again with a splash of water if needed.
