Thick dark pearl amber honeydew honey with a wonderfully pleasant aromatic fragrance. High mineral content, nutritional and therapeutic benefits, very strong antioxidant.
The Nikkitas family practises nomadic beekeeping across the Peloponnese, moving hives to follow seasonal blooms and find optimal conditions for their bees. This traditional method, used in Greece for millennia, allows bees to forage from specific plants at peak flowering, producing honey with distinct varietal characteristics.
The honey is harvested from hives placed in carefully selected wild forests and ecosystems around Sparta, at varying altitudes on Mount Taygetos.
Raw, unheated, and unpasteurised. Heat treatment (used in most commercial honey) destroys enzymes, reduces antioxidant activity, and breaks down glucose oxidase, the enzyme responsible for honey's antibacterial properties.
Our honey retains all its natural enzymes, pollen, and nutritional compounds. Independent laboratory testing confirms high antioxidant activity, antibacterial properties, and elevated mineral content across all three varieties.
The 400g glass jar is screen-printed (no labels), fully recyclable.

The Nikkitas Family

The Nikkitas family have practised nomadic beekeeping across the Peloponnese for generations. Rather than keeping hives in fixed locations, they move them seasonally to follow specific blooms, pine forests on Mount Taygetos for honeydew, wild thyme scrubland at altitude for thyme honey, and mixed wildflower meadows for the Flowers & Conifers variety. Each move is timed to peak flowering, when nectar and pollen are at their most concentrated.
The honey is extracted without heating and bottled without pasteurisation, processes that destroy enzymes, reduce antioxidant activity, and eliminate the antibacterial compounds that make raw honey therapeutically active. Independent laboratory testing confirms high antioxidant, antibacterial, and mineral content across all three varieties.
The same family also produces the Nikkitas extra virgin olive oil from ancient Koroneiki groves on the same estate in Sparta, a dual operation rooted in the same principle of minimal intervention and maximum traceability.

Three factors: it is raw (unheated, unpasteurised), it comes from nomadic beekeeping (hives moved to specific plants at peak bloom), and it has independently verified high antioxidant and antibacterial properties. Pine honey is produced from honeydew rather than nectar, giving it higher mineral content and lower sugar than flower honeys.
