A caviar dip is the most generous way to serve caviar to a crowd: a cool, creamy base of creme fraiche and sour cream, brightened with chives and lemon, with a proper spoonful of caviar folded through and more heaped on top. It gives everyone at the table a taste of something that usually comes in tiny, ceremonious portions, and it does it in ten minutes with no cooking at all. Served with crisps, blinis, or crudites, it turns an ordinary gathering into an occasion.

The only rule is restraint with the mixing. Caviar is delicate, and the pleasure is in the individual pearls bursting on the tongue, so you fold most of it in gently at the last moment and crown the dip with the rest rather than beating it to a paste.

Why the caviar matters

Here the caviar is both seasoning and centrepiece, so its quality is the flavour of the dish. A good Oscietra or classic caviar brings clean brine, a nutty richness, and that unmistakable pop against the cool cream. Because there is no cooking to hide behind, buy the best you can and treat it gently: fold it in at the end, keep everything cold, and spoon it with mother-of-pearl or bone rather than metal, which can give it a tinny edge.

Ingredients

  • 150g creme fraiche
  • 100g sour cream or full-fat Greek yoghurt
  • 2 tablespoons finely chopped chives, plus more to finish
  • 1 small shallot, very finely chopped
  • Zest and a squeeze of 1 lemon
  • 30 to 50g caviar
  • Salt and white pepper
  • To serve: crisps, blinis or crudites

Method

  1. Make the base. Fold together the creme fraiche, sour cream, chives, shallot, and lemon zest. Add a small squeeze of lemon juice, and season carefully with salt and white pepper. Remember the caviar is salty, so go lightly.
  2. Chill. Cover and chill the base for at least twenty minutes so the flavours settle and it firms slightly.
  3. Fold in the caviar. Just before serving, gently fold about two thirds of the caviar through the dip with a light hand, keeping the pearls whole.
  4. Crown and serve. Spoon into a cold serving bowl, top with the remaining caviar and a scatter of chives, and serve at once with crisps, blinis, or crudites.

Chef's notes and common mistakes

  • Fold, do not stir. Beating the caviar in bursts the pearls and muddies the dip. Fold gently and save the best spoonful for the top.
  • Season the base, not the caviar. Caviar is already salty. Taste the cream first and let the caviar add the final seasoning.
  • Keep it cold. Both the dip and the caviar should go from fridge to table. Set the bowl over ice if it is a warm day.
  • Add the caviar last. Folded in too early, it loses its texture. Do it at the final moment before serving.

Variations

Swap the chives for dill, or add a spoon of finely grated cucumber (squeezed dry) for a fresher, lighter dip. A little grated horseradish gives it warmth. For a richer version, fold in softened cream cheese. The same base is wonderful spooned onto baked potatoes or dolloped over smoked salmon.

Make ahead and storage

The creamy base can be made up to a day ahead and kept covered in the fridge; it only improves as the flavours meld. Fold in and crown with the caviar only just before serving. Leftover dip keeps for a day, though the caviar's texture is best on the day it is opened. Never freeze it.

Serving and pairing

Serve the dip cold with crunchy vehicles: kettle crisps, homemade blinis, thin toast, or crisp vegetable batons. It is party food that looks far more lavish than the effort suggests. A glass of ice-cold Champagne or a clean, cold vodka is the classic partner, both cutting the richness of the cream and echoing the brine of the caviar.
